It was my desire to have a coffee roasting business in Ligonier Valley for many years. I discovered a transportable roaster and knew that “now was the time”. My partner, Dave was crazy enough to agree to the idea and “so it began”. Our business was established in June, 2010

We ordered the roaster, made with all U.S.A. parts, from a small company out west, traveling nine days round trip to pick it up. It was quite the adventure--- as I’m sure the business will be too.

Our intention is to offer quality coffee that is fresh roasted. This makes all the difference in taste, as our increasing number of coffee “fans” can attest to. To maintain peak freshness, the beans are roasted after they are ordered.

Since our first event, Back to the Garden Market, “just down the road” from us, we’ve brewed and sold coffee at many festivals and markets. Along with purchasing direct from us….our coffee is sold at various other businesses from Rector to Pittsburgh with more in the works. A list is posted. Other businesses have expressed interest and we are receiving a lot of phone and e-mail orders. The positive response is very encouraging.

We hope that once you try our coffee you’ll taste the difference too and become a valued customer and friend as well!!

Question  Coffee to Prevent Gallstones?
I've been trying to cut back on caffeine, but I just read that drinking coffee can lower the risk of gallstones. What should I do?

Answer (Published 12/19/2002)
New results from a large study did show a 25 percent lower risk of gallstones among women who regularly drink four or more cups of coffee a day (compared to women who drink none). This finding, published in the December 2002 issue of the journal Gastroenterology, comes from the famous Harvard Nurses' Health Study, which has followed more than 80,000 women for 20 years. An earlier study found that drinking coffee lowers gallstone risk among men.
The Harvard researchers suggested that the caffeine in coffee is responsible for the gallstone effect, perhaps because it triggers gallbladder contractions that may discourage stone formation.
If you're prone to gallstones (risks are highest among overweight, mid-life women, diabetics and those whose mothers had gallstones), you can take a number of other preventive measures that may be better for overall health:

5 New Uses for Coffee Beans

1. Pie Weights: When prebaking a piecrust, use beans to keep it from puffing up or shrinking into the pie plate: Line the bottom and sides of the cold dough with foil and fill to the brim with beans.
2. Hand Deodorizer: After handling onions or garlic, rub a few beans between your palms to eliminate any lingering smell.
3. Candle Anchor: Pretty and functional: Fill a hurricane vase with beans before adding a pillar candle to help keep the candle steady and minimize mess (the beans will catch the wax).
4. Nose Neutralizer: Sniff beans between spritzes at the perfume counter to cleanse your "palate" between fragrances.
5. Pore Shrinker: Place two cups of medium- to light-roast beans (which have more caffeine than dark varieties) in a bowl or a bathroom sink and fill with hot water. After a few minutes (when the water is cooler), splash your face for a tighter complexion.

REMINDER!!!!

Connections Gift Shop and Tea Room will be having their grand opening April 2nd!! Don’t be confused by the name. They will have coffee too, our fresh roasted coffee, brewed and french pressed.
We will be there offering samples of coffee to help them kick off their opening. Please stop in!
Dave roasted and I am getting the beans ready to deliver to Currant Thymes and Barb’s Country store in Rector. Hopefully it will be there tomorrow, Saturday !!!

Coffee....is good for you!!

Happy Saint Patrick’s Day!!!    
Here is an Irish Coffee recipe to round off a meal of:
Beef Stew in Stout with Herb Dumplings
Irish Soda Bread (of course)
Apple Cake (in  honor of St. Patrick himself planting an apple tree outside what is now Armagh city)
Irish Coffee
2 measures of Irish Whiskey
1 tsp sugar, or to taste
freshly made strong black coffee
2 measures heavy cream

  1. Put the whiskey into a warmed heatproof glass with sugar to taste. 
  2.  Pour in the coffee and stir until the sugar has completely dissolved.
  3. Pour the cream very slowly over the back of a spoon that is just touching the top                                 of the coffee and edge of glass. Keep pouring until all the cream is added and settled on the top.  
  4.  Do not stir! Drink the coffee through the cream
